A no-bake cake is a great option if you don't have much time to cook, don't have an oven, or just don't feel like messing around with the dough and making a mess in the kitchen.
Recipes for delicious no-bake cakes
1. Cookie and sour cream cake without baking
Ingredients
- 3 cups cookies (any type, but chocolate or vanilla wafers work best)
- 2 cups sour cream ;
- 1 cup sugar;
- 1 teaspoon vanilla extract;
- 1/2 cup unsalted butter, melted
- whipped cream and fresh berries (optional, for filling).
Cooking
- Crush the cookies in a plastic bag with a rolling pin or grind them in a food processor until they are fine crumbs. Save 1/2 cup of crumbs for topping the cake later.
- In a bowl, combine remaining cookie crumbs, sour cream, sugar, vanilla extract and melted butter. Mix until smooth.
- Take out a springform pan with parchment paper. Squeeze the cookie mixture into the bottom of the mold using a spoon or spatula.
- Sprinkle the reserved cookie crumbs over the mixture, pressing lightly to stick.
- Cover the mold with plastic wrap and refrigerate for at least 2 hours or until the dessert is firm.
- Before serving, remove the sides of the split form and transfer the dessert to a serving dish. Garnish with whipped cream and fresh berries.
2. Cake without baking with cookies and condensed milk
Ingredients
- 3 cups shortbread cookies;
- 1 can of condensed milk with sugar;
- 1/2 cup unsalted butter, melted
- 1/2 cup chocolate chips (optional, for sprinkling)
Cooking
- Crush the cookies in the plastic bag with a rolling pin until they are crumbly.
- In a bowl, mix cookie crumbs, sweetened condensed milk and melted butter. Mix until smooth.
- Spoon the cookie mixture into the bottom of the pan, using a spoon or spatula to even it out.
- Sprinkle the chocolate chips over the mixture, pressing lightly to stick.
- Cover the mold with plastic wrap and refrigerate for at least 2 hours or until firm.
- Before serving, remove the sides of the springform pan and transfer the cake to a serving platter.
3. Cake without baking without sour cream
Ingredients
- 1.5 cups of all-purpose flour;
- 1 cup unsalted butter, softened
- 1/2 cup granulated sugar;
- 1/2 cup light brown sugar;
- 1 teaspoon vanilla extract;
- 1/2 teaspoon salt;
- 2 cups of chocolate chips;
- 1/2 cup sprinkles.
Cooking
- In a large bowl, mix softened butter, granulated sugar, light brown sugar and vanilla extract with an electric mixer until smooth.
- Add flour and salt, mix on low speed.
- Add the chocolate chips and sprinkles to the batter, mix again on low speed.
- Line a baking dish with parchment paper, spread the cookie dough, pressing it down to create an even layer.
- Cover the mold with plastic wrap and refrigerate for at least 2 hours or until the cookie dough is firm and no longer sticky.
- When the cookie dough hardens, remove the cling film .
- Serve the biscuit at room temperature, cut into wedges. You can add whipped cream or a scoop of ice cream.
4. Cake without baking from cookies and bananas
Ingredients
- 2 packs of baby cookies (about 400 g);
- 100 g unsalted butter, melted
- 4 ripe bananas, mashed;
- 400 g of condensed milk;
- 250 g cream cheese, softened;
- 300 ml of heavy cream;
- 1 teaspoon vanilla extract;
- 1 teaspoon cinnamon powder;
- 2 tablespoons of honey.
Cooking
- Crush the cookies into fine crumbs using a food processor or place them in a plastic bag and crush them with a rolling pin.
- In a bowl, mix the biscuit crumbs with the melted butter until a wet, sandy texture forms.
- Pour the mixture into the cake pans using a flat-bottomed glass so that the mixture is well compacted.
- In a separate bowl, combine banana puree, condensed milk, cream cheese, vanilla extract and cinnamon powder.
- In another bowl, whip the cream to soft peaks.
- Gently fold in the whipped cream and banana mixture.
- Pour the banana mixture over the biscuit base and smooth the surface with a spatula.
- Sprinkle the top of the cake with honey and use a toothpick or knife to create a marble pattern.
- Cover the cake with cling film and refrigerate for at least 4 hours or until set.
- When the cake has hardened, take it out, slice and serve chilled.
5. Cake without baking with gelatin and cookies
Ingredients
- 1 pack of gelatin (your choice of flavor);
- 500 ml of boiling water;
- 400 g cream cheese, softened;
- 1 can of condensed milk;
- 1/2 cup lemon juice;
- 500 g cookies;
- 1/2 cup unsalted butter, melted
- whipped cream and fresh fruit for topping.
Cooking
- In a bowl, dissolve gelatin in boiling water and stir until completely dissolved. Set aside to cool.
- In another bowl, mix cream cheese, condensed milk and lemon juice. Whisk until the mixture is smooth and creamy.
- Gradually pour the chilled gelatin into the cream cheese mixture, whisking constantly.
- Chop the cookies into small pieces using a food processor.
- Mix crumbs with melted butter until smooth.
- In a springform pan, press the cookie mixture to the bottom of the pan with a flat-bottomed glass.
- Pour the cream cheese mixture over the cookie base and smooth the surface with a spatula.
- Cover with cling film and refrigerate for at least 4 hours or until set.
- When hardened, transfer the dessert to a serving plate.
- Top with whipped cream and fresh fruit, if desired.
6. Cake without baking without butter
Ingredients
- 2 cups of oatmeal;
- 2 cups pitted dates;
- 1 cup unsweetened grated coconut
- 1 cup chopped nuts (walnuts, almonds, pecans)
- 1/2 cup cocoa powder;
- 1/2 cup honey;
- 1/2 cup almond milk;
- 1 teaspoon vanilla extract:
- a pinch of salt.
Cooking
- In a food processor, grind the oats until they are broken into small pieces.
- Add pitted dates to a food processor and process until they form a sticky ball.
- Add shredded coconut, chopped nuts, cocoa powder, honey, almond milk, vanilla extract, salt to a food processor and process until well blended.
- Squeeze the mixture into a cake pan using a flat-bottomed glass so that the mixture is well compacted.
- Cover with cling film and refrigerate for at least 2 hours.
- When the dessert has hardened, take it out of the refrigerator, cut it and serve it chilled.
7. Cake without baking "Broken glass"
Ingredients
- 2 cups sour cream;
- 1 cup heavy cream;
- 1 can of condensed milk with sugar;
- 2 sachets of unflavored gelatin;
- 1/2 cup cold water;
- 1 package of flavored gelatin (your choice of flavor);
- 2 cups of boiling water;
- cracker crumbs;
- fresh berries or fruits for decoration.
Cooking
- In a bowl, mix sour cream, heavy cream and sweetened condensed milk. Beat until smooth.
- In a separate bowl, pour the unflavoured gelatin into cold water, let it sit for a few minutes until it becomes soft.
- Heat the softened gelatin in the microwave for 15-20 seconds or until completely dissolved. Add to sour cream mixture and beat until smooth.
- Pour the mixture into a large bowl or mold and refrigerate for at least an hour.
- Meanwhile, prepare the flavored gelatin by dissolving it in boiling water, stirring until completely dissolved. Set aside, let cool to room temperature.
- As soon as the sour cream mixture hardens, take it out of the refrigerator, use a knife to break it into small pieces of irregular shape (hence the name "Broken Glass").
- Mix pieces of broken glass with flavored gelatin, pour the mixture into a small baking dish.
- Refrigerate the mixture for at least 2 hours.
- Once the gelatin has set, sprinkle cracker crumbs on top and garnish with fresh berries or fruit of your choice.
