Vegan zucchini pancakes recipe

But such a simple dish as pancakes can be varied with a large selection of ingredients: they can be sweet or salty, with different types of flour in the composition, with grated apples or zucchini.


Today we offer a fairly common and beloved vegan zucchini pancake recipe.


Vegan zucchini pancakes have an easy dietary recipe. And our recipe is also gluten free.


Ingredients for Vegan Zucchini Pancakes

  • 1 large or 2 medium zucchini;
  • A little greens to your taste (in the recipe, parsley and dill);
  • 2-3 st. l. chickpea flour (or a little more if the zucchini is juicy);
  • Salt, spices - to taste (we have asafoetida, black pepper, oregano);
  • Coconut oil for frying or greasing a baking sheet when baking.

Making Vegan Zucchini Pancakes

Let's prepare a zucchini for a start. If it is large, you need to peel it from the peel - it may already be harsh; and also remove ripe seeds from the middle. If the zucchini is young, you do not need to do this.


We rub the zucchini on a fine grater - this way they will hold together better, and less flour will be required. First, add the chickpea flour so that it holds the zucchini together and there is no liquid juice left, the dough should be homogeneous. If there is too much juice, you can drain some. And only now we add finely chopped herbs, salt and spices.


It is advisable to immediately start frying or spreading the dough on a baking sheet, otherwise juice will begin to stand out from the interaction with salt, and the dough will become liquid. You can fry in coconut or other oil that you use for this. Try not to overdo it with it, chickpea flour does not absorb as much oil as wheat flour.


A more dietary version of the recipe when we bake pancakes in the oven. You can also brush a baking sheet or baking paper with a little coconut or other oil. The baking time depends on the oven and the thickness of the pancakes - 15 minutes at 180 degrees. After 15 minutes, they can be turned over to the other side (if they are not yet cooked enough) and baked for another 5 minutes.


Serve with any vegan sauce you like.
