Vegan or lean borscht is increasingly appearing on the tables. And all because the variety of vegetables in its composition gives it an incredible aroma and taste. It is satisfying and healthy.


Of course, each housewife prepares it in her own way, each has its own secrets. A more dietary option is without stewing and frying vegetables. Brighter taste - with the addition of hot spices and garlic. Everyone will choose for themselves.


We offer you one of the options for preparing this wonderful dish, loved by many since childhood.


Vegan borscht: ingredients for 3 liters. a saucepan

  • 1/4 medium head of white cabbage
  • 150 g red cabbage
  • 1 medium carrot
  • 1 medium beet
  • 1 bell pepper
  • 1/2 vegetable marrow
  • 2 medium potatoes
  • 3-4 small tomatoes
  • 1/2 lemon small
  • a piece of celery root
  • greens (parsley, dill)
  • 2-3 bay leaves
  • salt, spices - to taste (asafoetida, smoked paprika, oregano)
  • refined coconut oil for stewing vegetables


Cooking vegan borscht

Pour 2.5 liters of water into a saucepan and put on fire.

Peel and cut the potatoes into small cubes. Chop white and red cabbage. Send potatoes and cabbage to boiling water and cook over medium heat.

Meanwhile, grate the carrots and beets on a coarse grater and transfer to a pan to simmer in coconut oil over low heat. Sprinkle well the beets with carrots with lemon juice, which will keep them bright in color.

Next, we rub the celery root on a fine grater and cut the sweet pepper into small strips. We send it all to the pan to stew vegetables. Do not forget to stir.

We rub the zucchini on a coarse grater and put it there in the pan. Until the carrots and beets are soft, do not salt, even if salt in the process, as the salt tanns them when cooking. Also, on a coarse grater, three and tomatoes, getting rid of the skin. When the vegetables are almost ready, pour in the grated tomatoes and simmer for another 2 minutes. All stewing of vegetables takes 10-15 minutes, while potatoes with cabbage are being cooked.

We check the vegetables in the pan for readiness. If ready, put the stewed vegetables there. Add salt, spices, bay leaves and leftover lemon juice. Lemon can be cut into circles and tossed into the pot too.

Boil everything together for 2 minutes. Add chopped herbs and turn off. For a better taste, let it brew under the lid for at least half an hour. Although, if the smells of vegetables and spices have been causing an appetite for a long time, you can try what happened.

Serve with fresh herbs.
